A stay in the beautiful nature and quiet surroundings of Old Rye

We are a family who bought Lyng Dal together in 2012. Nicolaj and Kristin and Kristin’s sister Anita. We also live in Gl. Rye with our children. Maybe we are colored by the fact that we live here ourselves, but we love the area.

The tranquility, the nature, the diversity of wild herbs, roots, mushrooms, flowers, berries, etc. that grow right around us.

We are also quite fond of our permaculture-inspired garden, where our ducks act as snail patrol and our students, employees, children and family can work together and watch produce grow.
Everything tastes a little better when it’s freshly picked from the garden and nature.

Our shared passion is food from scratch, pickling, fermentation, sourdough, herbs, kombucha, kefir, brewing, local collaboration, menu and beverage composition and hosting. All 3 of us are trained in the industry as chefs, waiters and sommeliers.

Our cozy hotel with just 9 rooms is located right next to the restaurant. They all have their own bathroom and toilet, TV and balcony, French balcony or terrace. It gives you a good place to sleep after an evening with us and with a nice view of the beautiful nature around the hotel.
